Hernan Martinez is a third generation coffee grower, working in the Guantincara Village. The family farm has been exclusively growing coffee for the past 20 years. Their aim is to work towards a stable and concious market by focusing his farming efforts on cultivating specialty coffee.
The farm employs about 12 - 15 people, and 8 members of the Martinez family work on the farm, all of whom depend on the farms success economically during the harvest season. The cultivation of specialty coffee allows a better work / life balance for Hernan‘s family and workers.
After hand sorted, cherries are depulped and fermented for 18 hours. The cherries are dried in a greenhouse, taking about 20 days to fully dry.
