HARO VILLAGE
Haro Wachu is a village in the Yirgacheffe region of Ethiopia known for its high-quality coffee, which is grown at elevations of 1900-2300 meters above sea level. The coffee from this area is characterised by a bright and delicate flavour profile, featuring notes of juicy nectarine sweetness and fragrant jasmine aromatics.
FERMENTATION
Dry fermentation, also known as the natural process, involves drying the entire coffee cherry with skin, pulp and mucilage still attached, allowing a fermentation process that imparts natural sugars and fruity flavors to the bean. The coffee is dried on large raised beds or patios for several weeks, requiring careful monitoring and regular turning to ensure even drying.
