Fikadu is a coffee producer from the Yirgacheffe region of Ethiopia, known for its ideal climate and fertile soil that support high-quality coffee cultivation. His farm, which spans 0.06 hectares, produces heirloom coffee varieties that are processed using traditional methods to enhance their unique flavors, including notes of cane sugar, cocoa, and honey.


FERMENTATION

Dry fermentation, also known as the natural process, involves drying the entire coffee cherry with skin, pulp and mucilage still attached, allowing a fermentation process that imparts natural sugars and fruity flavors to the bean. The coffee is dried on large raised beds or patios for several weeks, requiring careful monitoring and regular turning to ensure even drying.
