Ela Tenecha village, nestled in the high-altitude coffee-growing region of Yirgacheffe, is known for its cool climate and unique landrace varieties—particularly Kurume, which thrives in this environment. Born and raised in this coffee-farming community, Bogale Galacha grew up deeply involved in his family’s coffee farm. With a keen interest in coffee varieties, Bogale became locally regarded as a coffee "breeder," often advising fellow farmers on varietal selection. Over time, he refined his own 3.39-hectare farm to feature Kurume and 74110—both prized for their quality and adaptability.



FERMENTATION

Natural coffee processing relies heavily on meticulous cherry selection, careful drying practices, and the use of raised beds to enhance airflow and uniform drying. The process begins with the selective handpicking of fully ripe red coffee cherries. 

The selected cherries are then spread in a single layer on raised drying beds, constructed with bamboo to allow optimal airflow from above and below. Cherries are regularly turned by hand usually every 30–60 minutes during the first few days and several times daily thereafter—to ensure uniform drying and prevent mold or fermentation. Once the cherry starts drying, the beds are covered with a mat during peak heat or unexpected rain to protect cherries.
