FERMENTATION
The pulped natural coffee fermentation, also known as honey fermentation, involves removing the coffee cherry's skin and pulp but leaving the sticky, fruity mucilage on the bean to dry. This method is considered a middle ground between dry and wet fermentation. After pulping, the beans are dried with this mucilage still attached, resulting in unique sweetness and fruitiness.
