Moises Hidardo Hernandez, a fourth-generation coffee farmer founded CAFESMO and runs Finca Las Cascaritas with his mother in Mercedes, Ocotepeque, Honduras. The 3.5-hectare farm sits at 1,250 meters above sea level and features native pine trees, banana, American walnut, and hazel pine as well as coffee.
FERMENTATION
Anaerobic honey fermentation involves pulping coffee cherries and leaving some mucilage on the beans for the honey process. The beans are then fermented in sealed oxygen-free tanks, allowing unique flavors to develop. This method often produces coffee with sweeter, fruitier, and more complex profiles than traditional processes.
