FERMENTATION
Dry fermentation, also known as the natural process, involves drying t h e entire
coffee cherry with skin, pulp and mucilage still attached, allowing a fermentation
process that imparts natural sugars and fruity flavors to the bean. The cofe is
dried on large raised beds or patios for several weeks, requiring careful
monitoring and regular turning to ensure even drying.
SANTA FELISA
Santa Felisa was established in 1904 by Mr. Trinidad E. Cruz and is now a 4th generation operation. The farm operates by analysing the laws of nature, and the needs of the community. Santa Felisa produces specialty coffee using a variety of processing methods, and has consistently won places in the Cup Of Excellence over the years.
FERMENTATION
The wet process uses water to remove the coffee cherry's skin and pulp. followed by fermentation to break down the mucilage. During fermentation, natural enzymes convert sugars into acids, gases, or alcohol, which can influence the coffee's flavor. The beans are then rinsed, dried, and milled, preparing them for roasting.
